Biscoff Shakes
A smooth, creamy, and refreshing milkshake! Flavored with Biscoff cookie butter spread, this shake is Mike's favorite snack!
When Mike and I got married, we thoroughly enjoyed registering for gifts. It was the first time either of us lived on our own, so we really were starting from scratch. We were completely blessed with all the gifts we received from our family and friends.
But we were slightly confused that a month after our wedding, our registry was showing that a blender had been purchased, but we couldn't find it in our house. I couldn't remember receiving a blender and it wasn't listed on any of our gift lists we made for thank you cards. We couldn't figure out if we had misplaced the blender, or if the registry was just incorrect. We decided to wait until we needed a blender to buy one.
In December, we were at a family Christmas party and Mike's aunt came up to us with a gift. She said it was a wedding present. We were married in October, and had already received a shower and wedding gift from his aunt, so we certainly weren't expecting anything! We opened up the bag and inside was a blender! It turns out that Mike's aunt had purchased the blender for us, but she attended two weddings in October. When she got our thank you card, she was confused that we thanked her for a set of glasses as she was sure she had given us something "bigger" (her words, not mine!). Then she received a thank you from the other couple, thanking her for the blender. She quickly realized that she had mixed up the gifts! She felt bad about it, so she bought us a blender!
We had a good laugh about the confusion and were thrilled to have a blender! We love to have smoothies for breakfast or snacks, so our blender has been used a lot. So much in fact, that after 3.5 years of weekly use, the motor in our blender has called it quits. A few weeks ago we ordered a new one, and let me tell you, Mike thought it was Christmas again! He was so proud of our shiny blue Blender
!
Mike is completely obsessed with Biscoff Spread
. We go through at least one jar a week! Not too long ago, he suggested making a Biscoff shake. Shakes are so easy to make, I wasn't going to complain about his desire for an easy snack! We both loved these shakes, and now Mike requests them a few times a week.
I think we're going to have to buy stock in Biscoff...
Biscoff Shakes
Makes 2
Ingredients:
3 cups vanilla ice-cream
1 cup milk
1/3 cup Biscoff spread
Blend all ingredients together until smooth. Pour into glasses and serve immediately. Top with whipped cream if desired.

Biscoff Sugar Cookie Bars
A simple sugar cookie base, topped with cookie butter and chocolate. This sweet treat is sure to be a favorite snack!
Mike and I are part of a small group at our church. There are two other couples in our group and we meet about every other week. When we meet, the host prepares dinner and the other two couples provide a salad or a dessert. I typically volunteer to bring the dessert because it's one of my favorite things to make. I like to try new things with our small group, and I also appreciate having other people eat the desserts so I don't have a whole pan of sweets tempting me at home!
Last week I was searching through my Pinterest account, trying to find a dessert to make. I wanted something pretty easy since Friday was busy and I didn't have a lot of time to make a dessert. When I came across the Biscoff Sugar Cookie Bars, I stopped searching. Mike is still obsessed with Biscoff Spread
, so I had a feeling this dessert would be a hit!
When I made this recipe, I apparently didn't read the directions carefully enough, so I used 2 cups of chocolate chips in my chocolate layer. While it was still delicious, I would recommend using just 1 cup because otherwise the chocolate is quite overpowering.
These bars were the perfect dessert for our small group, but I think next time I'll have to make a pan just for Mike and me!
Biscoff Sugar Cookie Bars
Makes 1 9x13" pan, approximately 20 bars (depending how you cut them)
Ingredients:
1 Sugar Cookie Mix
, plus ingredients to make it
2 sticks butter, divided
1 cup Biscoff Cookie Butter Spread
1/2 cup powdered sugar
1 cup chocolate chips
1. In a mixing bowl, prepare the sugar cookie mix according to the package directions.
2. Press sugar cookie dough into a greased 9x13" pan and bake at 350 for 20 minutes.
3. Cool the cookie bars on the counter for 10 minutes and then refrigerate for 30 minutes.
4. While the cookie bars are cooling, prepare the cookie butter layer: Soften the butter in the microwave for about 10 seconds.
5. Add in the cookie butter and microwave for 30 seconds, until melted.
6. Beat in the powdered sugar until smooth.
7. Spread the cookie butter evenly over the cooled cookie bars. Return to the fridge.
8. Melt the remaining stick of butter with the chocolate chips in a microwave safe bowl.
9. Spread the chocolate layer over the cookie butter layer. Return to fridge to cool until the chocolate is set.
10. Bring the bars to room temperature before cutting so the chocolate layer doesn't crack. Store covered at room temperature or in the fridge.

Chocolate Covered Biscoff Oreos
This traditional Oreo cookie is far from the usual! Topped with Biscoff spread and coated in milk chocolate, this sweet treat is sure to please!
Though you'll want to eat more than one cookie because they're so delicious, they are extremely rich so Mike and I felt satisfied after just one. But an hour or so later, I wasn't going to resist when I passed by the cookies on the counter!
Chocolate Covered Biscoff Oreos
Makes 12
Ingredients:
12 Oreo cookies
3/4 cup Biscoff Spread
1/2 cup milk chocolate chips
1 teaspoon Coconut Oil
1. Place Oreos on a wax paper lined cookie sheet.
2. Spoon about 1 Tablespoon of Biscoff spread on top of each Oreo. Spread evenly with a knife.
3. In a microwave safe bowl, melt the chocolate chips and coconut oil. Stir smooth.
4. Spoon melted chocolate over the Biscoff covered cookies.
5. Allow the chocolate to harden before serving.
Cookies can be stored in an airtight container.

Mike is obsessed with Biscoff Spread
. Obsessed, I tell you! If you know Mike, you know how impressive this is for him. First off, he is not a big snacker. Secondly, when he does have a snack, it is rarely something sweet--he is a chip guy! So for him to love Biscoff spread means it really is something special.
He tried Biscoff for the first time probably about 2 years ago. He thought it was good, but nothing special. Then he tried it again more recently and he was hooked. A few weeks ago he asked me to make him a snack. His request? Marshmallows dipped in Biscoff spread. I was shocked! While he was eating his snack (which was delicious, by the way!), he commented that Oreos would probably taste really good with Biscoff spread. I told him we'd be sure to try it, so here it is!
This rich cookies are exactly what Mike and I were hoping for! And they're so simple to make. Just take an Oreo cookie, top it with a generous spoonful of Biscoff spread, and spoon a bit of melted chocolate over top. I added a bit of coconut oil to the chocolate to aid it in melting and spreading. Biscoff S'mores
Do you ever eat something that is oh, so good, you have to tell someone about it?
These s'mores definitely fit that description!
We are completely in love with Biscoff Spread at our house! I introduced Mike to it last year, and now he will request a piece of toast or an apple with "that yummy peanut butter type stuff". (Yeah, he can't remember the name!) My mom also is hooked on it. In fact, a couple weeks ago, I was with my parents and sliced up an apple to eat with some Biscoff Spread. When I opened my mom's jar, it was empty! Turns out, the glass jar was heavy so she assumed she had some left. I was a little disappointed :)
Anyway, when Mike and I had our dinner over the fire a couple weeks ago, we decided it wouldn't be complete without roasting a couple marshmallows and making some s'mores. We decided to put some Biscoff spread on the s'mores, and I'm so glad we did! It certainly put these s'mores over the top!
I'm not sure you can consider this a recipe, more like an idea, but I've shared how we made ours below!
Biscoff S'mores
Makes 1 s'more
Ingredients:
1 graham cracker sheet
1/4 of a Hershey's chocolate bar
1 Tablespoon Biscoff Spread
1 marshmallow
1. Break the graham cracker in half and spread Biscoff on one half.
2. Roast the marshmallow and carefully place on top of the Biscoff.
3. Top the marshmallow with the chocolate and remaining half of the graham cracker. Smush together and enjoy!
If you've never had Biscoff Spread before, I'd encourage you to give it a try! The Biscoff Cookies are delicious too!

Biscoff Bars
On Saturday, Mike and I finished putting together our nursery furniture. We bought a 4 piece set about a month ago, and we've been putting together about one piece each week. We've had quite the adventure setting it up, and I think we're both happy it's finally finished!
The first day we opened up the box of pieces, we were completely astounded by all the little parts and the lack of instructions. Seriously, we couldn't find the instructions anywhere. Thankfully, we were able to print off a copy from the company's website. Then we began to set up the dresser and realized how useless the instructions were. All they had were diagrams, but they were hard to decipher and were not always clear. We had the dresser about halfway done before we realized we had put the left side on the right side and needed to take it apart and restart.
Of course, the instructions just told you to attach part A to part B. There were no words to tell you to that those pieces needed to go on the right side, not the left side. The only way to tell was through trial and error. Unfortunately, we ran into this issue with the crib and the changing table as well.
Let's just say that by time we finished with the changing table on Saturday, we were thrilled to be finished with the stress of putting the furniture together.
Thankfully, I had just the dessert we needed to wipe away our stress. Everyone knows desserts is stressed spelled backwards! I chose these Biscoff Bars after browsing through Jennifer's blog, Mother Thyme, for this month's Secret Recipe Club. Her blog is filled with stunning pictures and delicious foods. My list of recipes was long, but these Biscoff Bars won the spot at the top of the list.
The Biscoff flavor really shined through in these bars. The chocolate chips added the perfect amount of sweetness. I didn't have enough Biscoff cookies in the house, so I eliminated the crust and just went with the bars for this recipe. These were a hit in our house and I'll certainly be making them again!
Biscoff Bars
Makes 9 bars
Ingredients:
5 Tablespoons butter, softened
1/2 cup sugar
2 eggs
1 teaspoon vanilla
1 cup Biscoff spread
1 cup flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup milk chocolate chips
1. In a large bowl, cream together the butter and sugar using an electric mixer.
2. Beat in the eggs.
3. Add the vanilla and Biscoff spread and beat until the mixture is creamy.
4. Stir in the flour, salt, and baking powder and mix until it's all combined.
5. Fold in chocolate chips.
6. Spread the batter into a greased 8x8" baking pan.
7. Bake at 350 for 45-50 minutes, until a toothpick inserted in the center of the bars comes out clean.
Cool bars completely before cutting into them.

Chocolate Covered Biscoff Spread Cookies
I'm pretty sure I missed out on Girl Scout cookies this year. I don't always buy them, but this year a box of Tagalongs sounded pretty good.
Apparently we had some Girl Scouts come to our house selling cookies, but Mike didn't think we needed any so he sent them away. It was only after I told him that I wanted Tagalongs that he told me the girls had stopped by. I waited too long to buy any and now from what I hear, it's too late.
So what's a girl to do? I decided if I couldn't buy the cookies, I'd just make my own!
I opted to use Gamesa Galletas Marias Cookies
as a base, in the interest of both time and lack of desire to bake cookies. (If you can't find these cookies, feel free to use your choice of flat cookie or make your own.) When I reached into the cupboard for my jar of peanut butter, I got distracted by a jar of Biscoff Spread. Oh boy! I put the peanut butter back and decided that Biscoff Tagalongs were sounding too enticing not to make.
I was thrilled with how these turn out. It turns out that Biscoff and chocolate go together as well as peanut butter and chocolate. My parents and Mike were big fans of these cookies as well. And, I've converted my mom to a Biscoff lover!

Makes 24 cookies
Ingredients:
24 Gamesa Galletas Marias Cookies
1/2 cup Biscoff Spread
1/2 cup chocolate chips
1 teaspoon coconut oil
1. Spread about 1 teaspoon Biscoff spread onto each cookie and place on a wax paper lined cookie sheet.
2. In a microwave safe bowl, combine the chocolate chips and coconut oil. Microwave in 30 second intervals until the chocolate is melted and smooth.
3. Scoop about 1 teaspoon of melted chocolate on top of each Biscoff topped cookie. It will spread out on its own, but if it doesn't, spread it over the cookies with the back of a small spoon.
4. Allow the chocolate to completely dry, about 30 minutes.
Store cookies in an airtight container at room temperature, or in the fridge if the chocolate is too soft at room temp.

Biscoff Banana Bread
I worked out today for the first time in a long time. Between all the snow we've had lately making the roads absolutely horrible to drive on before 6 in the morning, and needing about 10 hours of sleep each night, it's been a while since I've worked out. I'm finally starting to get my energy back and so I decided that this morning was the perfect day to resume my workout routine.
I decided to use our Wii Fit game this morning. According to the game, it has been 417 days since I've last used it (thanks to our gym membership). If you've ever played before, you may remember that the Fit Board "talks" to you. This morning, when I stepped on it, it said "oof", like I'd gained a bunch of weight. Well, being pregnant might do that to you, but so might eating an entire loaf of this Biscoff Banana Bread by yourself!
When I saw this bread on Dorothy's blog I knew I had to make it. I've loved Biscoff spread ever since I've tried it. In fact, I enjoyed my first jar of Biscoff spread straight from the jar, on a spoon. It was just so good that I couldn't stop eating it! I decided that my next jar might as well be used in some recipes, like this bread. The Biscoff spread isn't overpowering in this bread, it's subtle but just enough to notice an extra special flavor in the banana bread.
Biscoff Banana Bread
Makes 1 loaf of bread
Ingredients:
1/2 cup sugar
1/4 cup vegetable oil
1/2 cup Biscoff spread
1/4 cup nonfat plain Greek yogurt
2 over-ripe bananas, mashed
2 eggs
7 tablespoons sour milk (To make sour milk: add 1 teaspoon white vinegar to the milk and let it sit for 5 minutes. You need a total of 7 tablespoons of liquid (milk + vinegar).)
1 teaspoon baking soda
2 cups sifted flour
1. Cream the sugar, oil, Biscoff spread, and Greek yogurt in the bowl of your stand mixer. (Mixing with a hand mixer is fine too.)
2. Add the mashed bananas, eggs, and sour milk to the creamed mixture and mix until completely blended.
3. Add the baking soda and flour to the batter and mix until just combined.
4. Pour the batter into a greased loaf pan.
5. Bake at 350 degrees for 50-55 minutes, until a toothpick inserted in the center of the bread comes out mostly clean.

When I saw this bread on Dorothy's blog I knew I had to make it. I've loved Biscoff spread ever since I've tried it. In fact, I enjoyed my first jar of Biscoff spread straight from the jar, on a spoon. It was just so good that I couldn't stop eating it! I decided that my next jar might as well be used in some recipes, like this bread. The Biscoff spread isn't overpowering in this bread, it's subtle but just enough to notice an extra special flavor in the banana bread.
Biscoff Banana Bread
Makes 1 loaf of bread
Ingredients:
1/2 cup sugar
1/4 cup vegetable oil
1/2 cup Biscoff spread
1/4 cup nonfat plain Greek yogurt
2 over-ripe bananas, mashed
2 eggs
7 tablespoons sour milk (To make sour milk: add 1 teaspoon white vinegar to the milk and let it sit for 5 minutes. You need a total of 7 tablespoons of liquid (milk + vinegar).)
1 teaspoon baking soda
2 cups sifted flour
1. Cream the sugar, oil, Biscoff spread, and Greek yogurt in the bowl of your stand mixer. (Mixing with a hand mixer is fine too.)
2. Add the mashed bananas, eggs, and sour milk to the creamed mixture and mix until completely blended.
3. Add the baking soda and flour to the batter and mix until just combined.
4. Pour the batter into a greased loaf pan.
5. Bake at 350 degrees for 50-55 minutes, until a toothpick inserted in the center of the bread comes out mostly clean.

Biscoff Bars
Have you tried Biscoff spread yet? If not, what rock are you living under? Just kidding. But I'm serious about this--run, don't walk, to your nearest Walmart and pick up a jar (or three...). All the hype you've heard about Biscoff spread is true--it really is the best thing since Peanut Butter. After hearing all my favorite bloggers raving about Biscoff, I knew I had to try it. I enjoyed my first jar...
Spoonful by spoonful.
Yes, when I wanted a sweet treat, I headed straight for my jar of Biscoff. A few delicious bites later, I was satisfied. When I bought my second jar, I thought maybe I should use it for something other than a snack. Perhaps, a recipe? After all that is what I do!
I took my recipe for Peanut Butter Cup Bars, but I swapped out the Peanut Butter for Biscoff spread. What a fantastic switch! These bars were incredibly rich, but oh so delicious.
Biscoff Bars
Makes 20 bars
Ingredients:
1/3 cup margarine or butter
1-3/4 cups powdered sugar
1 cup Biscoff spread
3/4 cup crushed pretzels
1/4 cup margarine or butter
1/2 cup milk chocolate chips
1. Line an 8x8 pan with foil.
2. In a microwave safe bowl, melt 1/3 cup of the margarine.
3. Stir in powdered sugar until smooth.
4. Add in Biscoff spread and crushed pretzels and stir until completely combined.
5. Spread Biscoff mixture into foil lined pan.
6. In a microwave safe bowl, melt remaining 1/4 cup of the margarine.
7. Add chocolate and stir until melted. You might need to put it back in the microwave for 15 seconds if the chips won't melt completely.
8. Pour chocolate over Biscoff layer and smooth.
9. Refrigerate at least an hour, until set.
10. Remove from pan using the foil as a "handle" and cut with a pizza cutter.
Store any leftovers in an airtight container in the refrigerator.
